- 1.2 kg Sweet Potatoes
- 6 tbsp Unsalted Butter (melted)
- 3 large Garlic cloves (finely grated)
- 1 tbsp Fresh Rosemary (finely diced)
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 45g Parmesan cheese
Instructions
- Preheat oven to 180C/350F.
- Peel sweet potatoes, cut ends off, and slice into thin rounds (3mm thick).
- In a bowl, mix melted butter, garlic, rosemary, salt, and pepper. Toss potato slices to coat.
- Place one slice in each muffin cup; stack remaining slices with Parmesan cheese.
- Brush tops with leftover butter and bake covered with foil for 35 minutes; then uncover and bake an additional 15 minutes at 200C/400F until lightly charred.
- Let cool slightly before serving.
