  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • Fresh Parsley (chopped)
  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tbsp Flour + 3 tbsp water (for béchamel)
  • 1 tsp Sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Thinly slice the onions and sauté them in olive oil over medium heat for about 30–40 minutes until caramelized.
  2. If onions stick, add beef broth and simmer for an additional 10 minutes.
  3. In the same skillet, create a béchamel sauce by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Stir in two-thirds of the caramelized onions, along with salt, pepper, chopped parsley, and grated Parmesan.
  5. Cook cavatappi macaroni until al dente; combine with the creamy sauce mixture.
  6. Transfer to a baking dish, top with remaining caramelized onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden brown.
  7. Serve hot, garnished with fresh parsley.
