  • 7 large eggs
  • 2 tablespoons butter
  • 2 cloves garlic (sliced thin)
  • 5 oz baby spinach
  • 1/3 cup mayonnaise
  • 1 tablespoon mustard
  • Juice of 1/2 lemon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon hot sauce
  • 2 tablespoons dehydrated potato flakes
  • Minced fresno chili pepper (for decoration)
  • Yellow bell pepper (cut into small stars)

Instructions

  1. Hard boil the eggs by placing them in a pot covered with cold water. Bring to a boil over medium heat, cover, and remove from heat. Let sit for 10-12 minutes. Cool before peeling.
  2. In a skillet, melt butter over medium heat and sauté garlic until fragrant. Add spinach and cook until wilted; set aside to cool.
  3. Peel the cooled eggs and halve them lengthwise, scooping out the yolks into a bowl. Mix yolks with mayo, mustard, lemon juice, smoked paprika, hot sauce, dehydrated potato flakes, and the sautéed mixture until smooth.
  4. Pipe or spoon the filling back into each egg half. Decorate with minced fresno chili peppers as ornaments and yellow bell pepper stars on top.
  5. Arrange on a platter and serve chilled or at room temperature.
