  • 56 g bittersweet chocolate
  • 21 g Dutch-process cocoa powder
  • 1 tsp espresso powder
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Pie Crust: Mix flour and salt, cut in cold butter until crumbly, then add ice water to form dough. Chill for at least 30 minutes.
  2. Blind Bake the Crust: Preheat oven to 350°F (175°C). Roll out dough, fit into pie dish, prick with fork, and blind bake for about 15 minutes.
  3. Make the Filling: Melt unsalted butter and bittersweet chocolate together; stir in cocoa powder, espresso powder, and salt. Remove from heat and whisk in milk, sugars, cornmeal, eggs, and vanilla until smooth.
