  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until fully combined.
  4. Stir in flour, baking powder, and salt until just combined.
  5. Scoop out cookie dough onto a prepared baking sheet, flattening each ball slightly and pressing a measuring cup into the center.
  6. In a separate bowl, combine brown sugar, chopped pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt for the filling; spoon into each cookie well.
  7. Bake for 8-9 minutes until lightly golden; let cool before transferring.
