  • 2 pounds ground beef (or ground chicken)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire-roasted tomatoes
  • 6 oz cream cheese
  • 2 cups shredded cheddar cheese
  • Chicken or beef broth
  • Hot sauce
  • Mixed chili beans

Instructions

  1. Chop onions and poblanos; optionally sauté them briefly to enhance sweetness.
  2. Brown the ground beef in a skillet over medium heat; drain excess fat.
  3. In the crockpot, combine all ingredients: onions, poblanos, spices, tomatoes, hot sauce, butter, bay leaves, broth, cream cheese, cheddar cheese, and drained beans. Stir well.
  4. Cover and cook on low for about 2 hours.
  5. Before serving, stir the chili and remove bay leaves. Top with cilantro, green onions, avocado slices, and Greek yogurt.
