  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Prepare the Tofu: In a bowl, mix cornstarch, all-purpose flour, garlic powder, salt, and pepper. Coat cubed tofu evenly in the mixture.
  2. Cook the Tofu: Heat oil in a skillet over medium-high heat. Add tofu cubes and cook until golden brown on all sides.
  3. Make the Teriyaki Sauce: Whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil in a small bowl.
  4. Cook the Rice: Boil vegetable broth in a pot; add brown rice and salt. Cover and simmer for 15-20 minutes until tender.
  5. Assemble Your Stack: Layer cooked rice, sliced avocado, and crispy tofu in bowls. Drizzle with teriyaki sauce before serving.
