- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Boil salted water in a pot and add the carrot rounds. Cook for 10–12 minutes until fork-tender but not mushy.
- Drain the carrots and let them cool slightly. Place them on a lined baking sheet.
- Use the bottom of a glass or measuring cup to gently smash each carrot round until flattened.
- Drizzle with olive oil and season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan cheese.
- Roast in the preheated oven for 20–25 minutes, flipping halfway through until golden brown and crispy.
- Garnish with fresh parsley before serving.
