- 2 lbs baby potatoes, halved
- 6 slices turkey bacon or plant-based bacon, chopped
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and halve the baby potatoes.
- Chop the bacon into small pieces.
- In a large bowl, combine potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
- Spread the potatoes on the baking sheet in a single layer and sprinkle the chopped bacon on top.
- Roast for 30-35 minutes, flipping halfway through for even crispiness.
- Drizzle honey over the potatoes during the last five minutes of roasting.
- Remove from the oven, let cool slightly, garnish with parsley, and serve warm.
