  • 2 lbs baby potatoes, halved
  • 6 slices turkey bacon or plant-based bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes.
  3. Chop the bacon into small pieces.
  4. In a large bowl, combine potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  5. Spread the potatoes on the baking sheet in a single layer and sprinkle the chopped bacon on top.
  6. Roast for 30-35 minutes, flipping halfway through for even crispiness.
  7. Drizzle honey over the potatoes during the last five minutes of roasting.
