Ingredients
- 1–1/2 lbs. Little Potatoes Company White Creamer potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Fresh parsley for garnish
Instructions
- Poke each potato with a fork and microwave in a bowl for 4 minutes, flipping halfway through.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the microwaved potatoes with olive oil, salt, and pepper; toss to coat.
- Place the seasoned potatoes on the baking sheet and smash them gently until about 3/8" thick using the bottom of a drinking glass.
- Bake for 6 minutes, flip the potatoes over, and bake for an additional 6 minutes until golden brown.
- Remove from the oven and garnish with fresh parsley before serving warm.
