  • 1 teaspoon pumpkin pie spice

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder

  • For the cream cheese filling:
  • 1 large egg
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350F and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the first ten ingredients until smooth. Fold in flour, baking powder, baking soda, and optional salt until just combined.
  3. Pour two-thirds of the batter into the prepared pan.
  4. In another bowl, whisk together the cream cheese filling ingredients until smooth and pour over the batter in the pan.
  5. Dollop remaining pumpkin batter over the filling and spread gently.
  6. Bake for about 48 minutes or until golden brown on top.
  7. Cool in the pan for about 15 minutes before transferring to a wire rack.
