  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 24 ladyfingers
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon

Instructions

  1. In a large bowl, whisk egg yolks with powdered sugar until pale.
  2. Blend in mascarpone, coconut cream, and half of the coconut milk until smooth.
  3. In another bowl, whip remaining heavy cream and powdered sugar until stiff peaks form; fold into mascarpone mixture.
  4. Chill the cream mixture while preparing the coquito mix by combining condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon.
  5. Lightly dip ladyfingers into the coquito mixture and layer them in a dish.
  6. Spread half of the cream mixture over the ladyfingers and sprinkle with coconut flakes.
  7. Repeat layering with more dipped ladyfingers and cream mixture.
  8. Top with additional coconut flakes and a dusting of cinnamon. Refrigerate for at least 12 hours before serving.
