Ingredients
- 1 ½ cups graham cracker crumbs
- 2 tbsp granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp coconut extract
- 8 oz Cool Whip, thawed
- 2 (3.4 oz) boxes of instant coconut cream pudding mix
- 3 cups half-and-half
- 8 oz Cool Whip
- 1 cup sweetened shredded coconut, toasted
Instructions
- Prepare the crust by mixing graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a greased dish.
- In another bowl, beat softened cream cheese and powdered sugar until smooth. Stir in coconut extract and fold in half of the Cool Whip. Spread over the crust.
- In a separate bowl, whisk together pudding mix and half-and-half until thickened. Spoon this mixture over the cream cheese layer.
