- 3 1/2 lbs beef chuck, cut into 2" pieces
- 4 tablespoons unsalted butter
- 1 yellow onion, chopped
- 3 large carrots, peeled and chopped
- 5 garlic cloves, minced
- 2 tablespoons tomato paste
- 3 tablespoons all-purpose flour
- 2 cups bold apple vinegar
- 2 cups beef stock
- Fresh thyme
- Bay leaves
- 10 oz frozen pearl onions
- 16 oz cremini mushrooms
Instructions
- Preheat your oven to 350°F (175°C).
- In a Dutch oven over medium-low heat, melt 2 tablespoons of butter and sauté the chopped onions and carrots until softened.
- Add minced garlic and tomato paste; cook briefly until fragrant.
- Season beef with salt and pepper; increase heat to medium-high and sear beef on all sides.
- Deglaze with apple vinegar, scraping any browned bits from the pot. Add beef stock and return seared beef to the pot along with herbs.
- Cover tightly and bake for about 2½ hours.
- Sauté mushrooms in remaining butter; add pearl onions during the last few minutes of cooking.
- Combine sautéed vegetables with the stew and bake for an additional 45-60 minutes until beef is tender.
