- 3 ½ lbs beef chuck
- 4 tablespoons unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 tablespoons tomato paste
- 3 tablespoons all-purpose flour (or gluten-free alternative)
- 2 cups apple vinegar
- 2 cups beef stock
- Fresh thyme
- Bay leaves
- Cremini mushrooms
- Pearl onions
Instructions
- Preheat your oven to 350°F.
- In a Dutch oven, cook chopped bacon over medium-low heat until browned. Remove and set aside.
- Season beef with salt and pepper, then sear in batches until browned. Remove and set aside.
- Sauté onions and carrots in butter for 2-3 minutes; add garlic and tomato paste, cooking for another minute. Stir in flour for thickening.
- Add apple vinegar to deglaze the pot, then stir in beef stock, thyme, bay leaves, beef, and bacon. Cover and bake for 2 ½ hours.
