  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallows crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil or butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips and press the dough evenly into the prepared baking dish.
  7. Bake for about 20-25 minutes until golden brown. Allow to cool completely.
  8. Spread vegan marshmallows crème over the cooled cookie base.
  9. Melt semi-sweet chocolate chips with coconut oil; pour over marshmallow layer.
  10. Let set before cutting into squares.
