  • 1 lb ground beef (80% lean)
  • 1 small onion, diced
  • ½ cup bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 8 oz tomato sauce
  • 14.5 oz canned diced tomatoes, undrained
  • ½ cup chicken broth
  • 2 cups uncooked macaroni
  • 2 tablespoons butter
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, cook the ground beef with onion, bell pepper, and garlic until browned.
  2. Stir in the chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans; simmer for about 20 minutes.
  3. In another pot, melt butter and whisk in flour to create a roux. Gradually add milk and cream until smooth; stir in mustard powder, onion powder, salt, pepper, hot sauce, and cheddar cheese until melted.
  4. Combine the cooked macaroni with the chili mixture in the pot; stir well to incorporate everything.
  5. Serve warm garnished with fresh parsley.
