  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1 ripe avocado
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 4 large tortillas or wraps
  • Optional toppings: shredded lettuce, sliced tomatoes, bell peppers, pickled onions

Instructions

  1. Preheat your oven to 425°F (220°C). Cut cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. In a bowl, mix drained chickpeas with diced onion, cilantro, lime juice, olive oil, chili sauce, chili powder, cumin, garlic powder, and salt.
  3. Blend avocado with Greek yogurt (or vegan alternative), lime juice, water, and salt until smooth.
  4. Assemble wraps by layering roasted cauliflower and chickpea filling on tortillas. Drizzle with avocado crema and add any desired toppings.
