  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium roasted beets, peeled and diced
  • 1/3 cup crumbled feta cheese
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red apple vinegar
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. If not using pre-cooked beets, roast them wrapped in foil at 400°F for 40–45 minutes until tender. Cool, peel, and dice.
  2. In a large bowl, combine chickpeas, diced beets, sliced onion, parsley, and crumbled feta.
  3. In a small bowl or jar, whisk together olive oil, vinegar, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Let the salad rest for 10–15 minutes before serving to enhance the flavors.
