  • 56 fresh mozzarella cheese balls (sliced thinly)
  • 1 cup grape or cherry tomatoes (sliced thinly)
  • 2 tablespoons butter
  • 2 cloves garlic (crushed)
  • 1 tablespoon fresh parsley (chopped)
  • 1/4 cup balsamic vinegar
  • 2 teaspoons brown sugar (optional)
  • 1 pinch fresh basil (shredded to garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small saucepan over medium heat, melt butter, then add crushed garlic and chopped parsley. Sauté until fragrant.
  3. Arrange cleaned Portobello mushrooms on a baking sheet and drizzle with garlic butter.
  4. Layer sliced mozzarella and tomatoes generously inside each mushroom cap.
