- 2 gala apples (peeled, cored, diced)
- 1 tablespoon cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar (or honey)
- 2 tablespoons butter (cut into pieces)
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup raisins
- 1/4 cup pecans (or walnuts)
- 1/4 cup dried cranberries
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the butternut squash cubes, diced apples, cinnamon, vanilla extract, and brown sugar.
- Add salt and black pepper; mix well.
- Transfer the mixture to a lidded baking dish and spread evenly.
- Dot with butter and cover; bake for 15 minutes.
- Remove from oven, add raisins, cranberries, and nuts; gently toss.
- Cover again and bake for another 15 minutes.
