- ¾ cup peach preserves
- 2 tablespoons extra virgin olive oil
- 2 teaspoons soy sauce
- 2 teaspoons apple cider vinegar
- 4 salmon fillets (about 1½ pounds)
- 2 medium peaches, thinly sliced
- 2 teaspoons garlic, minced
- 1 ½ teaspoons kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
Instructions
- In a medium bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade.
- Place salmon fillets in a resealable bag and pour half the marinade over them. Seal and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F.
- Heat oil in an oven-safe skillet over medium-high heat. Sear the salmon skin-side up for 2-3 minutes until golden brown.
- Flip the salmon skin-side down and add peach slices around it. Cook for another couple of minutes.
- Pour reserved marinade over the salmon and peaches.
- Transfer to the oven and bake for 12-15 minutes until cooked through (internal temperature should reach 145°F).
