  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches, thinly sliced
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a medium bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Place salmon fillets in a resealable bag and pour half the marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Heat oil in an oven-safe skillet over medium-high heat. Sear the salmon skin-side up for 2-3 minutes until golden brown.
  5. Flip the salmon skin-side down and add peach slices around it. Cook for another couple of minutes.
  6. Pour reserved marinade over the salmon and peaches.
  7. Transfer to the oven and bake for 12-15 minutes until cooked through (internal temperature should reach 145°F).
  8. Serve garnished with parsley.
