Ingredients

  • 2 sheets of puff pastry (square)
  • 2 tablespoons honey
  • 100 grams crumbled blue cheese
  • 100 grams grated Parmesan cheese
  • 50 grams chopped walnuts
  • 68 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt and cracked pepper

Instructions

  1. Preheat your oven to 180C (350F) or 200C (390F) for electric non-fan forced ovens.
  2. Drizzle honey over each puff pastry sheet, spreading evenly.
  3. Divide the walnuts, blue cheese, Parmesan, and thyme between the sheets. Season with salt and pepper.
  4. Roll each sheet tightly into a log and cut in half lengthwise.
  5. Twist each half into a coil shape on baking paper.
  6. Brush with milk and bake for 25-30 minutes until golden brown.
