  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix the pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs, vegetable oil, and vanilla extract. Gradually stir in dry ingredients until just combined.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin tins 3/4 full with batter and add a tablespoon of cream cheese mixture on top. Swirl gently with a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
