  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth

  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a skillet with olive oil over medium-high heat for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. In a saucepan, bring chicken broth and salt to a boil. Add rice, reduce heat, cover, and simmer for about 15-20 minutes until tender.
  3. In the same skillet used for chicken, melt butter and whisk in flour to form a roux. Gradually add milk and some broth while stirring constantly until thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
