- 3 oz cooking oil
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 1/4 cups chocolate chips (divided)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
- In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Stir in one cup of chocolate chips.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Spray an 8” x 4” loaf pan with oil spray and pour in the batter. Sprinkle remaining chocolate chips on top.
