  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups beef broth (low sodium)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter

Instructions

  1. Sauté the onion in a skillet with 1 tablespoon of butter until translucent.
  2. Add ground beef to the skillet and cook until browned; drain excess fat.
  3. Stir in minced garlic and cook until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; mix well.
  5. Bring to a boil, then reduce heat and cover to simmer for 18-20 minutes.
  6. In a separate saucepan, melt remaining butter and combine with cheddar, Parmesan, and milk until smooth.
  7. Pour cheese sauce over the cooked rice and beef mixture; stir gently to combine.
