Ingredients

Scale
  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms gently using a damp cloth or soft brush. Halve larger mushrooms if needed.
  3. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, black pepper, and red pepper flakes (if using).
  4. Toss the cleaned mushrooms in the marinade until well coated; let sit for 5 minutes.
  5. Spread the marinated mushrooms in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through until tender and caramelized.
  7. Garnish with fresh parsley before serving.
