  • 5 cups Butternut Squash (cubed)
  • 1/2 cup Olive Oil (plus extra for drizzling)
  • 1 block (8 oz) Feta Cheese
  • 1 lb Pasta (such as rotini, orzo, or ditalini)
  • 10 leaves Fresh Sage (minced)
  • 3 cloves Garlic (minced)
  • 1 tbsp Hot Honey (or regular honey)
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, toss cubed butternut squash with olive oil, salt, and pepper. Spread in a baking dish with the feta in the center. Drizzle with olive oil and red pepper flakes if desired. Bake for about 30 minutes until tender.
  3. Increase the oven to 450°F and bake an additional 5-10 minutes until the feta is slightly browned.
  4. Meanwhile, cook pasta according to package instructions; reserve one cup of pasta water before draining.
  5. Once baked, stir in minced garlic, fresh sage, and honey into the squash and feta mixture. Add cooked pasta along with reserved pasta water until creamy.
  6. Adjust seasoning as necessary and serve warm.
