- 8 eggroll wrappers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 jalapeño peppers, seeded and finely chopped
- 1 green onion, finely chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
- Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly to form an eggroll shape. Seal edges with water.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Carefully add eggrolls seam side down and fry in batches for about 3-4 minutes until golden brown.
