- 3 cups butternut squash, peeled and cubed
- 340 g Brussels sprouts, halved
- 225 g bow tie pasta
- 340 g cooked smoked sausage (chicken or turkey)
- 5 cloves garlic, minced
- 2 tablespoons butter
- Olive oil
- Salt
- Pepper
- Smoked paprika
Instructions
- Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 15-20 minutes until tender.
- On another sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until golden brown.
- Cook bow tie pasta in salted boiling water until al dente; reserve some pasta water before draining.
- In a skillet, heat olive oil over medium heat and sauté sliced sausage until browned. Set aside.
- In the same skillet, add garlic and cook until fragrant. Stir in butter until melted; then add drained pasta, seasoning with salt, pepper, and smoked paprika.
- Mix in roasted squash, Brussels sprouts, and sausage; adjust seasoning as needed.
