- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground allspice
- 1/8 tsp. ground cloves
- 2/3 cup vegetable oil
- 2 large eggs, room temperature
- 3/4 cup brown sugar, packed (light or dark)
- 3/4 cup granulated sugar
- 1/2 cup sour cream, room temperature
- 1 tsp. pure vanilla extract
- 2–3 large honey crispy apples, grated
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
- In a large bowl, whisk together flour, baking soda, salt, and spices.
- In another bowl, mix vegetable oil, eggs, sugars, sour cream, and vanilla until well combined.
- Add the wet ingredients to the dry ingredients and gently fold until just combined.
- Fold in grated apples until evenly distributed.
- Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Prepare the brown sugar icing by melting butter with brown sugar and cream; whisk in vanilla and powdered sugar until smooth.
- Drizzle icing over the warm cake.
