  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp. pure vanilla extract
  • 23 large honey crispy apples, grated

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, sugars, sour cream, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and gently fold until just combined.
  5. Fold in grated apples until evenly distributed.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Prepare the brown sugar icing by melting butter with brown sugar and cream; whisk in vanilla and powdered sugar until smooth.
  8. Drizzle icing over the warm cake.
