  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (for topping)
  • 50 g all-purpose flour
  • 50 g brown sugar (for topping)
  • 20 g rolled oats
  • ground cinnamon
  • ground ginger
  • ground nutmeg

Instructions

  1. Prepare the crust by crushing the biscoff cookies into fine crumbs and mixing with melted butter. Press into the bottom of a springform pan.
  2. Cook sliced apples with brown sugar and cinnamon over medium heat until soft.
  3. In a bowl, beat softened cream cheese with granulated sugar until smooth. Mix in Greek yogurt and eggs one at a time.
  4. Layer half of the cheesecake filling over the crust, add cooked apples, then top with remaining filling.
  5. For the crumble topping, combine melted butter, flour, brown sugar, and oats until crumbly; sprinkle over the cheesecake.
