  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
  3. Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust; press into the bottom of the pan.
  4. For the apple filling, peel and slice apples, toss with brown sugar and cinnamon.
  5. In a bowl, beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs one at a time until creamy.
  6. Layer the apple filling over the crust, pour cheesecake batter on top.
  7. Prepare an oat topping by mixing flour, brown sugar, cinnamon, quick oats, and melted butter; sprinkle over cheesecake.
  8. Bake in a water bath for about 60 minutes until set; cool gradually in the oven before chilling overnight.
