- 3 tablespoons butter (melted) for coating
- ¼ cup sugar for coating
- ½ teaspoon cinnamon for coating
- ½ cup unsalted butter (room temperature) for filling
- 1 ¼– 1 ½ cups powdered sugar (sifted) for filling
- 1 pinch of salt for filling
- 4 ½ ounces cream cheese (room temperature) for filling
- 3 tablespoons butter (room temperature) for filling
- 2 tablespoons brown sugar (light or dark) for filling
- 2 cups powdered sugar (sifted) plus more if needed for filling
- ½ teaspoon vanilla extract for filling
Instructions
- Preheat oven to 350°F. Reduce apple cider in a saucepan until it measures 1/4 cup; cool.
- In one bowl, mix dry ingredients: flour, baking powder, salt, and spices.
- In another bowl, beat butter and sugars until creamy. Add eggs and cooled cider; mix well.
- Gradually combine wet and dry ingredients until just mixed.
- Scoop dough onto lined baking sheets and bake for 11-13 minutes until springy.
- Cool cookies completely before filling with your choice of frosting.
