  • ¼ cup apple butter or applesauce

  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating
  • ½ cup unsalted butter (room temperature) for filling
  • 1 ¼1 ½ cups powdered sugar (sifted) for filling
  • 1 pinch of salt for filling
  • 4 ½ ounces cream cheese (room temperature) for filling
  • 3 tablespoons butter (room temperature) for filling
  • 2 tablespoons brown sugar (light or dark) for filling
  • 2 cups powdered sugar (sifted) plus more if needed for filling
  • ½ teaspoon vanilla extract for filling

Instructions

  1. Preheat oven to 350°F. Reduce apple cider in a saucepan until it measures 1/4 cup; cool.
  2. In one bowl, mix dry ingredients: flour, baking powder, salt, and spices.
  3. In another bowl, beat butter and sugars until creamy. Add eggs and cooled cider; mix well.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Scoop dough onto lined baking sheets and bake for 11-13 minutes until springy.
  6. Cool cookies completely before filling with your choice of frosting.
