  • 34 lbs turkey breast
  • 2 cups apple cider
  • 4 tbsp plant-based butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Optional: Fresh rosemary or thyme for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Pat turkey breast dry, season with salt and pepper.
  2. Sear turkey in melted butter over medium-high heat until golden brown on all sides.
  3. Transfer turkey to a roasting pan, pour in 1 cup of apple cider for moisture.
  4. Prepare glaze by simmering remaining apple cider, brown sugar, vinegar, mustard, garlic, cinnamon, and cloves until thickened.
  5. Brush glaze on turkey and roast, basting every 15 minutes until internal temperature reaches 165°F (74°C), about 1.5 to 2 hours.
  6. Let rest for 10-15 minutes before carving and serving garnished with herbs and sliced apples.
