  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a 9” square baking dish.
  2. In a sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Add cold butter and whisk until melted.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Whisk in the reduced cider mixture until well combined.
  5. Gently stir in flour until just mixed; pour into the prepared dish.
  6. Bake for 22-25 minutes until golden brown.
  7. Cool slightly before applying butter and cinnamon-sugar topping.
